Salmon Patties


I am still using up my pantry goods. You don't want to have all this food handy to just throw it away when the time comes to use it, because it's out-dated. So as June 1st is getting close, I will be getting new supplies for my hurricane prepared stash. Today I used up a small can of Salmon that we had, I think it was 7.5 oz. Using yuca instead of potatoes or bread crumbs, I think it keeps it pretty moist.
Ingredients:
1 cup of salmon
1 cup yuca (mashed)
1 1/2 tsp Dijon mustard (I used horseradish mustard)
2 Tbsp dried shallots
2 Tbsp mayonnaise
1 Tbsp lemon juice
1 tsp Old Bay Seasoning
1 egg (lightly beaten)
I also added a little chives, dill and capers.
Method:
Drain the salmon and flake it with a fork removing any skin and bones. I a large enough bowl, gently mix ingredients and form into patties. Heat oil over medium high heat in a large skillet. Cook the patties until nicely browned on both sides, about 4-5 minutes per side.

The great thing about salmon patties, beside being a quick and easy meal, is you can add what flavors you like. You can also use canned Mackerel or Tuna (of course then they wouldn't be "salmon" patties). Some other ingredients you might want to try and add are paprika, garlic, cilantro, parsley, Worcestershire sauce, wasabi, horseradish, water chestnuts, celery....and the list goes on. I think you get the idea. You can also use some great Asian flavors using ginger, and lemongrass.

Mmm....they hit the spot!
If you like to keep your patties simple, you can always add more zing with the sauce you serve it with. I just mixed mayo with sriracha sauce. Some serve it with cucumber, dill sauce.

  2. I love salmon patties. Ours are pretty simple, we usually use either bread crumbs or buttery cracker crumbs, lots of onion and pepper and of course the other basic stuff. We don't normally have a sauce with them as they are usually a side for pinto beans or macaroni and tomatoes.

I used up all my pantry goods when I did the dollar a day challenge in April, started restocking in May for "the season" including buying a couple of gallons of water each time I stop at the store. The count down to summer is really on now! :-)

    Mags, my daughter doesn't go for these or tuna. I feel the same way about shrimp. I don't like shrimps, but will still make it for my hubby.

  14. Great recipe! Salmon is one of my pantry basics--when we run out, I refresh the stash right away! This version looks so moist and have a beautiful golden exterior--perfect! I'm with you on Dijon and mayo and lemon in the burgers! Sometimes I add a ton of sliced scallion, some dill fronds, or if going in a more Asian-spicy direction, some togarashi.

    Sherimiya gave me the great idea of serving the patties with a thin layer of mayo and a healthy shake of furikake--that is sooooo good!

  16. Ive never tried yuca...I still have to try your yuca fries. I'm not really sure if I like salmon patties or not. I have bad memories of them as a child and I have not eaten them since. I think I might have to try them again...my taste buds have changed a lot since the last time I tried them...yours look delicious.

    Bo, yuca is really nice, nothing too strong or offencive. I used this a long time ago and remembered it when I was using yuca again. I think I felt the same way about salmon patties when I was young too. My tastes have also changed (thank goodness).

  28. Looks delicious Lyndsey! My mother used to make a salmon loaf (I haven't made it in ages) but I would much prefer the patties.
    My pantry is looking pretty empty now too. I hope the hurricane predictions are wrong again this year, but we need to be prepared. I get evacuation notices at first warning because I live on a barrier island.
