Ingredients:
-1 cup flour
-1 Tablespoon sugar
-2 teaspoons baking powder
-1/2 teaspoon salt
-1 egg
-1 cup milk
-2 tablespoons melted butter
-1 ripe banana (mashed)
-1 teaspoon Vanilla extract
-1 teaspoon cinnamon (or to taste)
-a little fresh grated nutmeg
Method:
Combine flour, sugar, baking powder, cinnamon, nutmeg and salt. In a separate bowl, mix together egg, milk, butter and banana.
Stir flour mixture into banana mixture; batter will be slightly lumpy.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.
I like using the mashed banana better than slicing it. You can see it still has some chunks in it. I do remember that when you see the bubbles come up that's when you flip them.
That's a hot griddle!
This sounds really yummy. I cheat though as I have a pancake maker:) Diane

ReplyDeleteMy kids would flip if I didn't make pancakes at least once a week. Two of my kids love peanut butter on them instead of butter and syrup.
ReplyDeleteYours sound so flavorful with the spices and bananas. YUM!
It's Sunday 7am right here and I think I want some of these too! I love any pancakes especially with butter & syrup. Well, actually it's best with maple syrup but can't find it here. So, sugar syrup is OK! Hmm..mm.... Enjoy & have a great Sunday.
ReplyDeleteBlessings, Kristy

ReplyDeleteThese look delicious! It took me quite some time to figure out the art of flipping a pancake without getting batter everywhere...I'm very impressed with your first pancake adventure!
ReplyDeleteOh my, I'd like these vanilla banana delights for dinner and dessert (and breakfast, come morning)! Totally yummy recipe, I can't wait to try, many thanks for sharing this culinary treat, Lyndsey!
ReplyDeleteYou're a pro already! These look scrumptious with banana in them! Sometimes I eat them with a just a little bit of butter. So yummy.
ReplyDeleteI am not a fan of bananas plain but I love them hidden in something like pancakes. These sound really good.
ReplyDeleteHi Lyndsey! How are you? You won the Yum-Yum Bento Box Book. So would you please to send your postal address so I can send the book to you. Thanks and Congrats!! :)
ReplyDeleteSounds like easy pancakes to make :)
ReplyDeletei seldom made pancake too, next time maybe I should try your recipe instead.
ReplyDeletereminds me of the song Banana pancakes by jack jhonson :)..
ReplyDeletelooks so delicious..
Looks great. I can't believe it's your first time making pancakes! I make them a couple times a month and love buckwheat the best. I don't put butter on mine and serve the syrup in a little custard cup and just dip the pancakes so it doesn't get soaked with it.
