This is my first time making pancakes! I know...I know...and my daughter loves pancakes too. What kind of mother am I? I haven't had pancakes since I was a child and my mother made corn pancakes with the Jiffy Corn Muffin mix. They were good, but I really haven't eaten them much since. I am not a big pancake fan, I don't like it when the butter and syrup soak in and make it really soggy. I do like French toast and have made that, but I won't put syrup on it. I don't like blueberries either so I won't make that, but banana sounded good.
Ingredients:
-1 cup flour
-1 Tablespoon sugar
-2 teaspoons baking powder
-1/2 teaspoon salt
-1 egg
-1 cup milk
-2 tablespoons melted butter
-1 ripe banana (mashed)
-1 teaspoon Vanilla extract
-1 teaspoon cinnamon (or to taste)
-a little fresh grated nutmeg
Method:
Combine flour, sugar, baking powder, cinnamon, nutmeg and salt. In a separate bowl, mix together egg, milk, butter and banana.
Stir flour mixture into banana mixture; batter will be slightly lumpy.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.
I like using the mashed banana better than slicing it. You can see it still has some chunks in it. I do remember that when you see the bubbles come up that's when you flip them.
That's a hot griddle!

It's Sunday 7am right here and I think I want some of these too! I love any pancakes especially with butter & syrup. Well, actually it's best with maple syrup but can't find it here. So, sugar syrup is OK! Hmm..mm.... Enjoy & have a great Sunday.

i know, i liked pancakes for so long but have prepared them only may be a couple of times so far! banana pancakes are my favorite by far though. yours look delicious.

Looks great. I can't believe it's your first time making pancakes! I make them a couple times a month and love buckwheat the best. I don't put butter on mine and serve the syrup in a little custard cup and just dip the pancakes so it doesn't get soaked with it.
