HAPPY VALENTINE'S DAY!
It was my turn to choose what we do for Martha Mondays. I thought with it being Valentine's Day and all that I would check Martha Stewart's website for Valentine's Day dinners. They had several ideas and I wanted something simple, so I went with sauteed sole with lemon . We often will go out on Vday, but in Florida in the middle of peak tourist season it's bad enough trying to get in a restaurant. This year we are staying in., and this is a simple...yet tasty dinner. Easy enough to prepare that you are not spending much time in the kitchen...more time to spend together with your Valentine!
Serves two:
1/2 cup flour, preferably Wondra (I had some pan searing flour from Wegman's a gift from co-worker)
1 teaspoon coarse salt (I used sea salt)
1/2 teaspoon freshly ground pepper
2 gray sole fillets (6 ounces each)
2 tablespoons unsalted butter
2 tablespoons olive oil (I didn't use this)
2 tablespoons sliced almonds (I just tossed some in the pan)
1 1/2 tablespoons chopped fresh parsley
Finely chopped zest and juice from 1 lemon, plus wedges for garnish (I used the lemon juice)
Directions
1.Combine flour, salt, and pepper in a shallow bowl. Dredge fish fillets in flour mixture, coating both sides, and shake off excess. I like to shake it in a baggie to lightly dust the fillet.
2.Melt butter with oil in a saute pan over medium-high heat. When butter begins to foam, add fillets. Cook until golden brown, 2 to 3 minutes per side. Transfer each fillet to a serving plate.
3.Add almonds, parsley, zest, and 2 tablespoons juice to pan. Spoon over fillets, and serve with lemon wedges.

It was a nice way to enjoy a delicate white fish. The flavor was fresh and you really can't go wrong with butter, lemon and almonds. I served it with some brown rice and grains blend, and baby bok choy. Okay it's really a no brainer, but it was delightful! You could even do some chicken breasts this way, as long as you flatten them out a bit first!
So sit back and enjoy the day!
What a lovely recipe. We try all kinds of fish and I have to tell you sole still holds first place for my taste buds; so light and with those almonds so very good.

ReplyDeleteWhat a coincidence, I had fish too! I made our pre-Valentine's dinner on last weekend. haha... Funny! I knew I won't have enough time during week days to prepare all the stuffs, so just put it on the weekend. An early celebration! And desserts a day after. ReplyDeleteHi Lindsey, how have you been? Sorry haven't been dropping by for a while. Been so busy since the end of last year. You know, I haven't had a good fish meal like this for such a long time. I really need to have more fish in my diet. Lemon & fish are always a great combination. I'm feeling lazy now at home after a long day at work, and hoping you could magically appear in front of me bringing a plate of this wonderful meal. Mmmmm...
