English Muffins

A few weeks back I saw Sherimiya ♥ of Happy Little Bento made some English muffins and she posted some photos on twitter. I was impressed, because I really didn't have any idea how you made them and hers looked perfect. She even made a tiny one for her "mini" bento series. Then I saw a good friend of mine Kristy of My Little Space made some as well, and of course hers looks beautiful as all her baked goods do. So with the example and encouragement of my fellow bloggers I gave it a shot.


In the bread machine:

1 cup milk
3 tablespoons butter
1 egg
1/2 teaspoon salt
2 teaspoons sugar
3 cups all purpose flour
1 1/2 teaspoons yeast
Select the dough cycle.

When dough is ready take it out of bread machine and onto a work surface dusted with cornmeal, press, and spread out to about 1/2 inch thick. With a english muffin cutter....hehe... or you can use an empty tuna tin with both ends cut out and washed (of course) cut and place on cookie sheet or tray also sprinkled with cornmeal. I didn't have a cutter or tuna tin, so I ended up using a large mug to cut the muffins. I also made some tiny muffins for a bento.


Let them rest for 20 minutes, I covered mine with a light linen cloth.


On a large flat skillet or griddle on medium heat cook the muffins 5 to 7 minutes on each side. You will see the familiar golden color of english muffins.



I like the way they turned out, not too many "nooks and crannies" (you can find a recipe from Alton Brown on Food Network for ones that has all thoses nooks and crannies if that's the way you like your english muffin)...and I do apologize for my camera...I couldn't get the focus to work, it might be done for good on any close up shot.


They toast up nice and crisp on the outside, soft and tender on the inside...



...and holds up well to jam and almond butter.


All in all I was very happy with how easy they were to make and how good they were. The next morning I made egg and cheese sandwiches for all three of us before school and work. (didn't get a photo of that) I will definitely make them again, you won't want to buy pre-made ones again! I want to try english muffin toasting bread next! (I'll let you know)

I just wasn't happy with the photos that darn camera! A new camera is long over due...I just keep paying the bills with my camera money! :(

  4. I have always ordered the English muffins from McDonald's because I think they taste great! These muffins of yours look delicious especially the toasted one:) I should try making some for myself too!

  6. Yahoooo... congrats! You've finally gave it a go. ha... See, how fast & easy it is, right? I am loving them. Will never had enough of them. My girl also loves it very much with her egg sandwiches.
    Frankly, those drawings are real beautiful especially in colour tone except the elephant body! haha... These are cool kids.

    I couldn't resist taking pics of the kids work, I get to see these hanging in the hall every morning when I walk to the cafeteria for my morning breakfast duty! A good way to start the day!

  10. Oh wow, homemade english muffins. That's awesome! Now I need to buy another bread maker for sure. But I'm pretty sure my bread maker money keeps going towards bill too (and gas for my car). Funny how that happens huh? :)

    Katrina, My bread machine is so old, the store I bought it at has closed and I think two other stores has gone in that space since. It has been in storage and I pulled it out and started using the dough cycle. I like it much better for that.

    K Butterfly - Ha! Trust me it was that easy...of course I use the bread machine because I don't have a stand mixer or dough blade or really the room. The hardest part was finding what to cut them with :D
