The Best Garlic Knots!
We love garlic knots, and the last time we ordered them from our favorite pizza place they were just awful! They were a hard tiny ball of knotted dough...drenched in garlicky grease... and the dough wasn't even cooked all the way through...yuck! Let me tell you I am not a doughy person. I have issues when my stromboli isn't cooked all the way and you get a doughy segment...so these went in the trash. They did smell good though with all the garlic!
So I decided to make my own...now you can make them using premade pizza dough from the market or a pizza place, but I didn't have any on hand. I searched for an easy recipe...one you can make in the bread machine and I found it! Yum!
I found the dough recipe on Pam's For the Love of Cooking blog, she used her mom' dinner roll recipe, and they turned out so big and fluffy. I will be using this recipe for dinner rolls.
Ingredients: recipe - Pam's Mom"s Dinner Rolls
1 cup water
2 tablespoons butter (softened)
1 egg (held under warm water)
3 1/4 cups flour
1/4 cup sugar
1 teaspoon salt
3 teaspoons yeast
Add ingredients to your bread machine in order listed. Set to dough cycle, when dough is finished flatten out on a floured surface into a rectangle shape. With a pizza cutter cut into strips and then in half lenghtwise. Keep them well floured so the won't stick. Take each strip and tie into a knot. Place onto silpat sprayed with a little oil or it worked fine on my stoneware baking sheet.
Bake 400 degree oven for 10-12 minutes.
For the topping:
1/2 cup melted butter
2 cloves minced garlic (or to taste)
1/2 teaspoon garlic powder
1/2 teaspoon marjoram
1/2 teaspoon chervil
3 tablespoons Parmesan cheese
Place all ingredients, except the parmesan in a microwave safe bowl and cook until butter is melted. You can use, fresh herbs like basil or Italian seasoning or any herbs that you like.
I brushed a little butter on without the garlic (otherwise it would tend to burn) before baking, but you can just bake them first without.
Once they come out ove the oven brush on the butter mixture... they turned out rather large so I did have to use more butter. Then sprinkle on the parmesan cheese. It made around 20 knots, good size knots.
They were so good, and smelled so good too. I couldn't believe how well they turned out, nice and soft inside...and so easy when made in your bread machine. I think easier than going to the store to pick up some pizza dough, and well worth it.
I hope you will give it a try. I now am ready to bring the rolls for Thanksgiving!

Never tried garlic knots before though I have seen them in the food blogosphere recently.

I love garlic knots but it's definitely always disappointing when you get bad ones! Better to just take matters into your own hands...these look great!

ReplyDeleteSo, I'm making these tonight and noticed that you call for three tablespoons of yeast. That seems like a lot of yeast? Is that measurement really right?
ReplyDeleteSassy, I can't believe you are the first one to notice that. No it is not 3 tablespoons, but 3 teaspoons, and I think 3 teaspoons is more than I usually use. I hope it works for you and you enjoy them! Let me know.
ReplyDeleteI went with 3 teaspoons because I couldn't imagine 3 tablespoons was right. These were really tasty! I ate way more than my share! I hope you like the coconut tart. The coconut crust would be great with a lime curd filling too if you've got limes hanging around.
ReplyDeleteOh my gosh these are good! Mine, however, came out HUGE mainly because I don't know any different. LOL Seriously, these are delicious and will definitely be made again (and smaller, too, so we think there are more of them). :)
ReplyDeleteOh my gosh these were good! They came out a little on the 'big' side so next time I will make them smaller. Also, I used a glaze of melted butter, minced garlic, garlic powder and parm cheese. Then I sprinkled just a tad more parm when they were finished. Definitely will make these again. AWESOME!
