Mushroom Spinach Cheese Omelet - and back to school

The weekends are a perfect time for a big breakfast...at least in my household. This past week I was busy at school getting the clinic ready for the new school year. You wouldn't believe how much paperwork we have to deal with. We are getting more medically fragile students, a couple more diabetic children and a former student that looks fantastic after she lost over 200 pounds. I am so happy for her, and was so happy to see her she is feeling great and her asthma is so much better. I recognized her right away but her first grade teacher and a few other didn't. It should be a good year despite all the budget cuts...we have such a great staff to work with and you know we are all there because we love kids and want to see them succeed. I heard a great quote during one of our staff meetings - "Students don't care how much you know until they know how much you care"

I forgot how tiring it was to work like that,(you know having the summers off and everything) plus meeting all the parents and excited kids at Meet Your Teacher night. So this weekend we have to build back our strength :D omelets are a perfect way to do that...so easy with fresh ingredients and you can make them the way you like them...

Crisp up the tortilla strips in a bit of oil and place them on a plate with paper towels sprinkle with some sea salt until ready to use...



Queso fresco work well with the tortilla strips.



Whisk 2 eggs with a tablespoon or splash of cream or milk, a dash of herbs...I used my blend of Fine Herbes
which has tarragon, chives, basil, dill and more...great for eggs and veggies.




...add the spinach and mushrooms after they have been sauteed enough to be softened and loose some of the moisture. I used baby bella or shiitake mushrooms, but of course you can use what ever mushrooms you like...I like to have the crunch of the tortilla strips inside the omelet as well as...




...on top!




now off to relax and gear up for Monday!

  2. I love all the ingredients in this omelet! My Quay Lo will eat this with bread and I with rice. Since my Nick has grown up, I am totally out of touch when kids will go back to school. Back then when Nicholas was still schooling, we always look forward to school holidays because then I can sleep in or we can go for holiday somewhere together. You are doing the right thing to relax for to recharge.

  3. My 2 elder sons can take care of themselves but my youngest still needs me to ferry him around so I am looking forward to the one week break after next week, yay!

    Veronica - The school year starts different each year it seems. When I was a kid we never started before Labor Day, so I never had to go to school on my birthday (next Friday). Then living here in Florida it got earlier and earlier, then the parents complained and they pushed it back the best they could. I do like spending the summers and time off with my daughter, but with her being 16 she won't want to do that much longer.

  7. Jeannie, my daughter will get her driving licence soon (I hope). But I do enjoy getting the same time off as she does. How long of summer breaks do your boys get?

    Parsley Sage - It is not really a recipe, but a good way to start the day. Yes this student is amazing, we were so worried about her health.
    Now she hardly has to use her inhaler and she can wear sandals and walk fine...it makes me tear up just thinking about it.

    Ann - no worries, I have been so busy too and that's why I was just getting to your blog as well! We do have a real life too don't we? :)

  8. Oh yes, we are back to school. 4 days down and only 175 more school days. LOL

    I wish I were eating that omelet right now on that beach. Both are beautiful! :)

  13. Hi Lyndsey! Mine starts kinder this Wednesday and I'm super nervous! I wish I could relax before this week starts but it was hectic... :-( Ahhhh it's so nice to live near ocean... I can spend the whole day. The omelet is my favorite breakfast. I put all kinds of stuff in it and eat with bagel...that's my full "happy" breakfast meal. Thanks for sharing your perfect omelet recipe! ;-)

  15. Wow! You sure are busy getting ready for school! My kids will be having a weeks break next week for the Hari Raya and National Day celebration, I'm looking forward to sleep in! Otherwise I'll be up by 4.45am each morning! :)
    The omelette sounds good, I don't mind having this for breakfast and lunch as well!

    Breakfast for dinner is a favorite at our house and I love your dedication to you kids! Amazing stories and heartfelt connnections. Those supporting our kids and education are a special breed. My mom taught for over 30 years and summers off were a treasure.

    At least you get a 3-day weekend for Labor Day!
