Cranberry Bread

I am feeling a little better, I went to the doctor and found out I had a sinus infection...which gave me laryngitis. Started out with allergies...and this isn't the worst of the pollen that bothers me. that comes in February.

We had a cold snap come through last night and today we will be lucky if we reach 70. At least it's clear and sunny! :) But my coconut oil is now solid, I've guess I am a lot like coconut oil...I like it when the temperatures are warm enough to keep the coconut oil liquid. I really can't complain mush though because for the last three weeks or so we've been have gorgeous 80 degree plus sunny weather.

Taking advantage of this baking weather I am trying to get as much in as I can...yes it's after the Thanksgiving and Christmas holidays, but is still good to use up all those cranberries that you might have left over or tucked away in the freezer!



I used a muffin recipe and I the cranberries whole, because that is the way I like them...


...you can see the bright red cranberries peeking out! I added some cinnamon chips to the recipe just to make it festive! Okay, I love these cinnamon chips, I hope I can still get them at the store, and stock up before they disappear until next year.



Cranberry Muffins or Bread:

2 cups flour
1 cup sugar
1 teaspoon salt
1/2 teaspoon baking soda
1 1/4 teaspoon baking powder
1 egg beaten (large)
1 teaspoon orange rind
1/2 cup plus 1 tablespoon orange juice
2 tablespoons melted butter
2 cups cranberries (whole)
1/2 cup chopped nuts (optional, I didn't use nuts cinnamon chips instead)
1/2 cup cinnamon chips (optional, you can use nuts instead)

Method:
Sift flour, sugar, salt, baking soda, baking powder together in a bowl, mix well.
Stir in beaten egg, cranberries, cinnamon chips, orange rind, juice and butter.
Add some of the chips on top before baking for a nice look and a good topping.

For muffins bake at 350° 20-30 minutes.
For bread bake longer 50-60 minutes until pick comes out clean.


I love cranberry bread and it is so easy to make. I like biting into the tangy whole tangy berry in this bread. The addition of the cinnamon chips were very good...not too much, and gave it a little more depth...or something!




It was nice and moist and yummy for breakfast and afternoon tea!

The tree is coming down today...getting ready for the new year!!

  1. I am a whole berry fiend myself, so I find your bread very enticing. Both the nuts and the cinnamon chips sound like a great addition. How I wish that slice was on a plate in front of me-yum!
    I hope you are feeling better before you ring in the New Year. Take it easy while you re-coup!

  4. So glad to hear you are feeling better. A lot of people I know are under the weather, my youngest son included but he is on the mend :)

    Your cranberry bread looks so festive and I am sure it must be very tasty with those cinnamon chips. I don't see them or those cherry chips at the stores anymore :( Will have to wait till next year.

  6. Lyndsey, have you tried drinking hot ginger tea? When I have cold and sore throat, I usually make myself a cup of hot tea containing grated ginger, lemon squeeze, and honey. My throat usually feels better afterward and from what I`ve heard, ginger is good to combat inflammation. Hope yo`re feeling much much better now and ready to rock your kitchen for the New Year`s celebration!
    And I`m falling in love with your cranberry bread! It looks so pretty with the red-pink flecks and must taste wonderful!

    Arudhi - Yes that was the first thing that I tried. I have some organic ginger and local honey, and my lemons on my tree are ready for picking...so I used just that. Then I did pick up some instant ginger from the Korean market that she said was good. She also gave me a handful of lozenges...she said you take care of my daughter (I work at the school clinic) I'll take care of you! It actually doesn't hurt, when I get laryngitis it's from allergies. :P

  8. Oh dear, hope you're well now. Me too facing allergy on my face and already started taking medicine a few weeks ago. What bother me most is those acne! Errrr.... Oh well, have to take it easy cause I am no longer a young lady. haha....
    I know you don't bake cakes or bread often. And this one does look really good. Kudos!

  17. Oh, Lindsey, I feel for you...I know what it's like to get sinus infections, I get them too sometimes. Glad you're starting to feel better now. Your temperatures on the West Coast Fl. are very much the same as ours here in S. Fl.

    Your cranberry bread looks so amazing, moist, and delicious with the fresh cranberries. Love the idea of the cinnamon chips, have not seen it in our stores, or I probably didn't check. Love the recipe. Just curious is to how much is actually 1 2/4 teaspoons baking powder? (is the such a measurement as 2/4?

    Elisabeth, yes our weather is pretty much the same. It is gorgeous again sunny and high of 78. Thanks for pointing out my typo...and yes there is a measurement 2/4 = 1/2 :P but the recipe did call for 1/4 it is now corrected (darn those fast typing fingers) :)

  22. Muffin or bread, this looks really nice, Lyndsey. I love the rustic look too. Must be wonderful to have a slice with a cup of coffee. I really hope you are feeling much better now. I too have a sinus problem and there are times that I just can't stop sneezing. Anyway, Happy New Year 2012 to you and your family and Tucker (if I remember his name correctly!:) too!   24. Sorry to hear you had sinus infection. I had a couple of friends who suffered with it and some even had a surgery (it was for a permanent fix). I hope you are all good now. I love cranberries in baked goods and this definitely looks delicious. I need to start baking this year more often!
