Leek, Bacon and Pea Risotto

Finally I made Martha Stewart's leek, bacon and pea risotto for Martha Mondays! I know it's not Monday and it was only about six weeks ago, seriously. It just goes to show you ...it's never too late!  This was Sassy Supper's choice and it was a good one, I just didn't get a chance to make it then. This week I had some organic leeks, and used up the end of the organic arborio rice, and I also had some bacon that was left over from breakfast and was already cooked!! Perfect I thought of this recipe.
About the only charge that I made to the recipe was the pre-cooked bacon..oh and I used up the chicken broth that I had on making chicken noodle soup for my "sickies" so I used beef broth, it was okay, but I'll bet it would be much better with the chicken broth.

Since I didn't have to cook the bacon, I added a little bit of oil in the pan to cook the sliced leeks until they were nice and tender.

After the leeks were tender I added the chopped bacon, then the arborio rice.

Cook until edges turn translucent, about a minute. 

Pour in a cup of white wine, and cook until absorbed about 2 minutes.

After adding all the broth a cup at a time, and the rice is al dente about 35 minutes, add the peas with the last cup of broth, then stir in the Parmesan cheese. Remove from heat and cover while you let it stand for 2 minutes. 

Season with lemon juice, salt and pepper. Top with a little fresh grated Parmesan!

    1. Yes, in Sarasota we do, actually we have several Amish restaurants. We also have a couple of Amish markets that we go to each week, for fresh local produce. So good!

  12. Nice!! When I was at the front desk my student aides always brought me cards and goodies for secretaries day. Now that I'm a registrar I have very little contact with students other than the day they register. We did get pizza a week late for a belated admin assistant day and a new coffee cup for the entire staff for teacher appreciation. I didn't even know there was a school nurse day - who can keep up with all this stuff! I know I couldn't which is why it doesn't bother me when admin forgets. Great recipe too by the way :)

    1. Our social committee give all the office staff something for admin assistant day, the social committee gave us gift certificates for school nurse day too, and include me cuz I'm in the clinic! It is nice to be appreciated!

  20. Its so important to recognise staff at schools - it really makes kids stop and listen and think of all the ways the teachers make a difference! Well done and I'm glad you got to see in a small way how much you mean! The risooto looks great - I'm so scared of leeks.... I need to give them a go!

    1. Thanks, it is nice to be apprecitated, sometimes I don't think they realize half of what we do each day! Oh you should give leeks a try, they are very nice! I use them in my split pea soup, and they are great with eggs.

  22. Lyndsey-your risotto looks so good, creamy flavorful, and delicious. Love all the cute and thoughtful gifts from the students...especially the beautiful macarons.

    I'm so surprised to see that you have an Amish community in Sarasota, and restaurants, markets, as well. We had a huge Amish community in Ohio, outside of Cleveland that we used to visit to buy all kinds of wonderful things, but here in West Palm Beach, Fl. we don't even have one!...sigh!

    1. We have a lrge Amish community in Sarasota, we don't have the horse and buggies like they have up in Michigan, but they have bicycles everywhere. A lot will come down from Ohio and Indiana for the winter. I was talking to this one girl at the market when I was buying my lady finger popcorn, she said she brought some down with her from Indiana, in case they didn't have it down here. She couldn't go the winter without her lady finger popcorn. :) They even have a new market and sandwich shop right at the mall. You'll have to come to my side of the state now for a visit! I have the summer off!

Lyndsey, i bet you are really good and patient at what you do, thus the students adore you! their appreciation says a lot! i have been thinking of risotto the last few weeks but sadly i can't seem to find arborio rice in the supermarkets here. i used to make risotto when i was living in singapore as i can get easily buy a bag of arborio. guess i'll keep searching here in kuala lumpur. looks so so tasty!! :)

      Maybe you could use another short grain rice instead of arborio rice, like pearl rice. Good luck in your search!

    What a thoughtful student to bring you French macaroons. I'm sure your kids adore you. After all, who doesn't love someone who takes care of them when they don't feel good. It's like being everyone's mom, only at school.
