Parmesan Chicken Tenders - and some weather

This is a healthier version of chicken tenders, since they are baked not fried. Of course you can pan fry them and they turn out just as good. I usually get the chicken tenders when on sale and the is usually in the bonus size. With a family of three that leaves a lot of leftovers. Which these work great for, to make a wrap for lunch. I will go ahead a make all of them and freeze them in meal size packages. Then warm them on my stoneware with some fries(or veggies) and my daughter is all set to go for a quick meal.

 I usually dust them in flour first, but this time I didn't and I think the breading stayed on better. It makes them easier to dip. Get two flat shaped bowls or pie tins and lightly beat 1 egg with about 1 Tablespoon deli mustard (you can use Dijon).

 In the other bowl or pie tin, I used half and half bread crumbs and Parmesan cheese (sometimes more parm). Season the bread crumbs with salt and pepper and whatever seasoning you like... I used grill seasoning on mine.



Dip the chicken in the egg/mustard mixture then lay it into the Parmesan mix lightly pressing into the crumbs. Use one hand in the egg so the other will stay dry. Place the breaded tender onto a baking sheet. I always use my stoneware for this. I have a large bar pan that works great. With the stoneware you don't have to grease it or turn the tenders to brown them. Spray the tops with cooking spray or I sprinkled with a little olive oil over each one (just a touch). Bake at 375 F degrees for 25-30 minutes until chicken is done and it's golden brown.
I know this is simple and you probably won't want to use your ovens too much in this summer heat. We have been rainy for a few days now and it looks like topical storm Debby is just hanging around, going nowhere. Since we won't be reaching 90 today it seemed like a good day to oven fry some chicken tenders.

  4. Wow! You're right! That's some storm! I wish we could have that here .... it's scorching and humid ... not a nice feeling. Chicken looks great! I've never liked frying anything with a coating so this would be perfect. Looking forward to the green mango concoctions! :)

  8. We had similar scenes in our area, but further west of W. Palm Beach. Lora's house is close to the Intracoastal, and had tons of rain all last week, and a week before, and very windy conditions. This past Sunday was the worst. Their pool looks in the same condition as yours...practically overflowing.

    Your chicken tenders are so yummy and I'm craving it. I make it the same way, with the Parmesan cheese, and love to eat it on a hoagie roll with mayo, lettuce and tomatoes...thinking about this, think I will go to Publix and get their chicken tenders sub...they make it so good!

    So sad about your mangoes, Lyndsey, just don't know what's up with those darn squirrels. They all must like the west coast area of Florida. Haven't even seen any running around here lately; and even if they do, they don't climb the mango tree!

    BTW-not to worry about being custardy re: the bread pudding all the milk and egg mixture gets soaked in, and all you taste is a dreamy soft cakelike texture that is superb...seriously!

  18. I am sure it took a long time for that cactus to grow to that size, pity you have to chop it. Nice to see parts of your life in this post:) Would be nicer if I could have a taste of that lovely looking chicken too!

  19. it has been hazy and hot here for the past weeks but thank god, it rained yesterday and the day before, at least the skies are much clearer but still humid. That's a huge cactus plant, the wind brought it down you mean? I like your parmesan chicken tenders and i think i will enjoy it very much with my rolls too! bye!

Lyndsey, I am now so keen to try make some of these parmesan coated chicken tenders! my nephew made some (but he didn't use parmesan) last month and i had the chance to try. so delicious. yours look just amazing, esp with parmesan. yum yum! it's been extremely hot here and just like how you're feeling, all of us would love to welcome some rain. take care and hope the storm hasn't done that much damage! cheers!

  21. Your chicken tenders are so similar to mine. I add a little bit of mustard in the egg batter as well, and the only difference is that I use Panko crumbs (Asian coarse bread crumbs) instead of the fine bread crumbs. I think it makes crispier crust. You got some nasty weather there. Hope it goes over soon.

  22. I like that they are baked. Not that I don't enjoy the fried version, just that I seldom do deep-frying at home. I need to look at other ways to "crumb" up the tenders now as I don't have Panko ready :(
