Thai Chicken and Noodle Salad

Okay are you ready for summer? I was the lucky one to choose our project for this weeks Martha Monday...and yes, I know it's Friday! Did you know I had such good plans for my time off for summer? But just like all of those "best laid plans" my husband has kept me busy running for parts, and watching his shop while he is out on a dock call fixing a jet ski so he won't have to close the doors, and he can keep working. This wouldn't be so bad if I could get on line while I was there and work on my blogging, but you can't count on getting on the internet on any given moment...it comes and goes...kinda like mine at home. The problem is if I call when it happens there is no way they can come to fix it right at that moment. Plus I loose my phone, but the cable TV still works.

Back to Martha Monday...I was searching the no cook section and found this wonderful Thai Chicken and Noodle Salad...but then you have to cook the chicken and the noodles, oh well you can make it ahead and serve it up later. The dressing is wonderful and you can make it as spicy as you want. Of course I had to change a few things, just for what I had on hand and my husband doesn't like cucumbers so I used zucchini instead. Brette from Martha and Me gave me that idea. I also used chicken that was already cooked just put the dressing over it all. 

1 1/4 pounds boneless, skinless chicken breasts, thinly sliced crosswise
Coarse salt
3 1/2 ounces Chinese rice noodles, broken in half if long
1 tablespoon vegetable oil, such as safflower
2 carrots, sliced into ribbons with a vegetable peeler
1 English cucumber, halved lengthwise and thinly sliced crosswise
1/4 cup fresh basil, torn
Bean sprouts, chopped peanuts, fresh mint leaves, red-pepper flakes, and sliced scallion greens, for garnish (optional)

Directions

  1. Place chicken and half of dressing in a resealable plastic bag (reserve remaining dressing). Marinate at room temperature for 30 minutes (or refrigerate up to overnight).
  2. In a large pot of boiling salted water, cook noodles until tender. Drain, and rinse under cold water to stop the cooking. Transfer to a platter.
  3. In a large skillet, heat oil over medium-high. Working in batches, cook chicken (do not crowd skillet) until cooked through, 1 to 2 minutes; transfer to platter on top of noodles.
  4. Top with carrots, cucumber, and basil. Drizzle with reserved dressing, and sprinkle with garnishes, if desired.


Spicy Asian Dressing
4 thinly sliced scallion whites
2 minced garlic cloves
1/2 cup soy sauce
1/2 cup rice vinegar
2 tablespoons light-brown sugar
1 tablespoon fresh lime juice
1/2 teaspoon anchovy paste (or 1 minced canned anchovy)
1/2 teaspoon red-pepper flakes

  4. Lyndsey, I just love your Thai noodles with the chicken, and love tha Asian dressing with it. I also make almost the same exact Asian dressing, but have not used anchovies in it. It sounds great to me, since I love anchovies. I will certainly make it your way next time.

    Isn't it annoying with the computer issues that you and I are both having? Mine is a 2003 model that is working OK, but needs more memory. It's not running slow...just keeps freezing up sometimes, and can't even restart for hrs.

    Love the cute photos of the kids socks, and shoes...my granddaughter Gabby also graduated from the 5th grade yesterday, and they had all day fun activities. I hear you about how busy you were, so was my daughter who is part of the staff at her school!

      Yes, freezing up is just as annoying as off/on internet service. :( and the more memory needed thing!

      It is so fun seeing how the kids dress themselves at school every day. This one girl who came in to check her blood sugar several times everyday would pose for me when she wore something cute and colorful. She stop and say, I suppose you want a picture of this? :)

  6. What a great view to have!! I hear you on the internet issues. Ours was spotty until we upgraded our DSL to a faster one. Now it's not as bad, but I still think we need to replace our router and modem. They are pretty old and AT&T said that should completely solve the problem. Just haven't gotten around to calling them back....always so much to do!

  7. hi lyndsey, i love your appetising noodle salad and its dressing. Would love to have it anytime! i'm looking at all the socks and how they wear it, there's one looks like gloves on the toes, right? it must been such a fun day!!

  8. I love Thai food of any kind! We have many Thai restaurants here in Malaysia since Thailand is our neighbor! You're so adventurous to make this salad. I have never tried making a Thai salad before even though we have many Thai food ingredients here. Haha! Love the day out to the ocean. I used to live by the Straits of Malacca during my childhood but where I live now it would take 1 hour drive see an ocean :(

    1. You are lucky to have such easy access to Thai food. I would love to see the Straits of Malacca. We are lucky to live right near the Gulf of Mexico and a few hours drive across Florida to get the big waves in the Atlantic ocean.
