White Bean and Tuna Salad - Martha Monday

Today is Martha Monday and I am posting this on Monday! I know, I know, mark the calender!! It was Ana from Sweet Almond Tree turn to choose, and this is what she picked. You can see the recipe here.White bean and tuna salad was just what I needed today, and I actually finished it in daylight!
Oops, now that's better with some smoked salt and pepper! I made just half the recipe because my daughter never has liked tined tuna. So this was perfect size for me and lunch the next day, but my husband ended up eating  the rest of it when he came home late for dinner.

I just did a few things different again due to what I have on hand. I used shallots instead of onion, and soften them when I  warmed the beans with grapeseed oil. I also added the tuna while it was warming so the tuna would be warm too. It did kind of blend it together too much where it didn't photograph very well. I didn't have the red wine vinegar so I used some Chinese Black vinegar, it worked nice due to being slightly sweet like balsamic vinegar, and a little Chinese shao hsing (rice cooking wine). Cilantro instead of parsley. I used arugula/spinach mixed greens, and shaved some asiago cheese on top. I loved the different flavors that came together so well and the olives added just the right touch of tang that it needed.  I really enjoyed it, perfect for these hot afternoons in Florida! With this salad being so easy to put together I will be making it again for sure!

  4. I love combinations of tuna and white beans - and using shallots is always preferable to me. Just love its freshness. Also - am a bird nerd, so the photos gave me a big smile!

    1. Yes, I tend to use shallots instead of onions often. Plus I have a good source for them. I'm glad you like the bird, I have many more photos.

  6. I love tin tuna & have used it in salads & pasta a few times but haven't tried using it with beans. How interesting that you've added chinese black vinegar & shao xing wine for that flavor!

    Tuna salad with beans is a fantastic recipe to have on hand. I love the Chinese black vinegar you've used. A very healthy and delicious lunch Lyndsey.

    1. Yes, so good I'll be sure to have on hand for hurricane season! I don't like a strong vinegar taste so I use Chinese Black Vinegar a lot, it's a little milder and slightly sweet, and works well in salads.

  8. i havent tried white beans but tuna..many times..from the tin too and i would want to try the frozen ones one day. I'm amazed reading that you have chinese rice cooking wine in your kitchen. Their addition makes a delicious stir fries. Have a good day, hugs!

    1. I actually have two bottles of Chinese rice cooking wine, of course one is almost gone. I like adding it to many things for a good flavor. I even add it to my Cuban black beans. But it is good in stir fries and such! Thanks so much for your visits Lena! You make me smile!

  12. This is similar to a salad I used to do from Marcella Hazan's Italian cookbook. That vinegar addition sounds delicious!! Love the bird. I've seen them sitting on the dock at my sister's house in Florida. Haven't seen any in the Chicago area.

  16. Fresh tuna is very expensive here, besides kids don't really like it as well. I still prefer using tin tuna especially for this kind of stirring up. Hassle free.lol! haha....

  17. I am so glad that you liked it. I never made mine because I was very upset. Brette send me an email and asked me to change my recipe form pasta with eggplant (penne alla Norma) to something else because she does not like eggplant. I felt very offended. I wrote to her that she should link back to the blog that contributes the recipe something that she never does. The result was that dear Brette removed me from the Martha Mondays list. Without notice. Very callous and arbitrary, I would say. Sorry to trouble you with this, but that's what has been going on behind the scenes. All my best to you.
