Today I do like potatoes and they are so fun to make them your own, you can add many things like wasabi, cream cheese, Parmesan, herbs, butter and much more...
Ingredients:
3 potatoes cooked (peeled and boiled like you would for any mashed potato)
1/2 cup coconut milk
1/3 cup coconut oil
1-2 clove garlic (cooked with the potatoes)
1 teaspoon fresh chopped rosemary or any fresh herb that you like or have to taste
sea salt to taste
After potatoes are cooked, drain and mash while still warm add coconut oil if it is in it's hard form it will melt quickly, add coconut milk until desired texture. You can leave the skins on the potatoes if you prefer, make sure the garlic is mashed along with the potatoes, it should be very soft by now. Last add the sea salt and stir in the fresh herbs.

I think you are right, and my daughter is eating things I never would of when I was her age. But then she never did eat the typical "kids" meals.
DeleteGrowing up in Malaysia, mashed potatoes was a novelty as it was seldom served. I love it though and so do my boys. I wonder if they would like this vegan version with coconut oil. Sounds really interesting. Will have to get some coconut oil soon.
ReplyDeleteThe coconut milk too it makes it a little creamy like milk would. It's nice to add what other flavors you like. I also add just coconut oil over my mixed rice with a little sea salt and that's it.

ReplyDeleteAnd I love the idea of adding coconut oil and coconut milk. The fragrance must be awesome! I will try this idea (I love potatoes) once I "think" I've lost a bit of weight. Need to sneak some carbs before I go nuts and binge.

DeleteOh lovely idea! I've never had mashed potatoes with coconut flavor. I've seen coconut oil in Trader Joe's and have been debating what I can use it for (as I don't bake much). This is a good one!
