Turkey Avocado Salad

The other day I picked up a whole turkey breast with the bone. I roasted it and it came out so good...full of flavor and so moist. It was perfect for lunches with the leftovers. I have been getting away from sandwiches and it was good in the salad with avocados which are at their peak right now.

So easy too, on a bed of mixed greens. I used key lime juice, you could use lemon...I just squeezed it on the avocado, then some rice bran oil. I have been using it for salads, and it works great when making a stir fry. It has a high smoke point, and is pretty healthy using the whole bran of the rice. You can us a good olive oil or pumpkin seed oil or what ever healthy oil that you like. Then some balsamic vinegar to taste. Seasoned with my favorite season blend, and a little sea salt. If I had tomatoes like my mom grows in her garden in Michigan I would have loved to add them here. But either way I enjoyed it a lot! Simple but good!

    1. That was the first time I made a whole turkey breast...I've done plenty of whole turkeys...so I was happy it turned out so good...perfect for a family my size.

      I know how you feel...I am so busy this week and going to Michigan next week and we are getting a new puppy, and I finally talked my husband out of the stone age and he got a iphone...and running around for his business and school starts back up the day after we get back...whew!

  16. I have been thinking about utilizing avocados to some Korean dishes. I am glad to see the wonderful salads you been making with them. I heard about rice bran oil but never imagine that you can get oil from the rice. There are so many things in culinary world that I need to try.

    So happy for you that you found a treasure, and I do mean a treasure of a book! My all time favorite thrift find as well. I got mine...'spanking brand new' soft covered same book at Goodwill, 2yrs ago for 79 cents, now the soft covered ones go for at least $2 or $3 and hard covered ones go up to $5 $6 the same price you paid...still great bargain. I love my Mark Bittman book! Great find, as you know the hard covered ones retail @$29.99 at least!

  23. I had never roasted the entire turkey (yet) in my life! I'd imagine it's very easy and you can use the meat for many different dishes. I love the simple salad dish like this.

    Colombian food place? Wow that's something we can't find in my neighborhood! Looks good too!

  27. Guess what Lundz! Till today I still have yet tried the avocado. haha... Whenever I reached to the fruit counter...always ended up just by staring at those avocados. Not knowing how to choose a good one. They all look the same to me. haha....
